With rising temperatures and more hours of sunlight, the coming of spring sees fresh vegetables coming out to welcome the new season.


Shepherd's Purse (Capsella bursa-pastoris)

Capsella bursa-pastoris, culled from the wild or grown in the farm, is commonly used as a vegetable in Chengdu and the surrounding areas.

Spring Bamboo Shoots

The bamboo shoot is widely taken as a kind of vegetable in Sichuan and southern China. In Chengdu, you can find many dishes with fresh bamboo shoots, especially the fresh spring bamboo shoots.

Chinese Chive

The Chinese Leek, also known as Chinese Chive, has a long history in Chinese kitchen. The leaves can be cooked in the stir-fries egg dishes, meat or fish dishes, or make a dish by themselves.
