It was not until more than 300 years ago that Sichuan people began to eat chili pepper.
Taking China as a whole, chili pepper existed just 400 years ago. According to ancient records, Sichuan people love pungent food and have a taste for food. For the flavor of "spicy", it referred to flavors from Chinese prickly ash, black or white pepper and ailanthus prickly ash etc. before the introduction of chili pepper. However, chili later replaced ailanthus prickly ash, so spicy and pungency flavors are brought together ever since then.

During the first year reign of Emperor Xuantong of Qing Dynasty, the Overview of Chengdu was issued. According to the document, various kinds of chili peppers were planted in Chengdu, such as Dahongpao, Chaotianzi, Niuzi, Denglong (lantern-shaped), Niujiao (ox horn-shaped) and Jixin (heart-shaped).

Green chili pepper would be harvested in May, red chili pepper in June, Denglong chili pepper in July, Haijiao (literally, the kind of pepper introduced from coastal regions of China) and red Haijiao in August... At that time, a great variety of chili pepper species had already been planted. Now you will find far more diverse species of chili pepper and related products.
