Chili and Sichuan Peppercorn allergic and you think Sichuan dishes are unbearable because they are too hot and spicy. Now take it easy and you’ll find foods in Chengdu satisfy your appetite even you DON’T eat hot food, since you have numberless gustatory options in the city to enjoy its many non-spicy dishes.
It is true that Sichuan cuisine is noted for its spiciness and heavy applications of chili, Sichuan peppercorn and various other spicy ingredients. However, some well-known dishes in the province, with Chengdu as its gastronomic capital, are totally free from spiciness or just slightly spicy.
Today we will recommend some not-spicy dishes which you can easily find in the city, just to offer people with little tolerance of spiciness.
Twice Cooked Pork
Twice Cooked Pork (回锅肉) is a Sichuan dish of spicy seared pork belly that's way too famous to ignore and too delicious not to share.
All the red hot chili bean sauce and green peppers covering the dish make it look hot and spicy, but when cooked right, this dish melts in your mouth and gives such a pleasant flavor that you may down two or three servings of rice with it.
Pig-Knuckle Soup
Pig-Knuckle Soup is one of the favorite dishes for locals. It is traditionally eaten by people in Chengdu to restore strength and health. The soup would be milky and sweet and the meat and bones get separated after being stewed for hours. It feels like the knuckle would melt immediately after you take a bite. It would be the best to have it with some chili sauce in the bleak winter' days.
Pig's Intestines and Chicken
Do you like intestines? What about intestines stewed with chicken soup? The flavor of intestine itself, chicken soup and special sauce would mix together after this dish is done. And also you won't feel it too greasy to eat intestines with chicken and vegetables.
Leshan Sweet Skin Duck
Leshan Sweet Skin Duck enjoys a high fame for its great taste and basically it could be found everywhere in Chengdu. The duck is stewed in a special sauce, which makes the duck skin a little sweet crispy and tender, just very light spicy with fragrant and salty duck meat. Some people even think the Leshan Sweet Skin Duck is more delicious than Beijing Roast Duck. So if you come to Chengdu or Leshan, don't miss the chance to taste it!
Steamed Rice Powder and Pork
Steamed Pork with Rice Powder (粉蒸肉in Chinese), a renowned dish in Sichuan Province, is popular in many areas of south China, including Sichuan, Hubei, Hunan, Zhejiang and Fujian Provinces. With streaky pork and glutinous rice powder as the main ingredients, this dish is healthy and nutritious. It can be spicy or sweet depending on how it is prepared. This dish looks mouthwatering and tastes fat but not greasy. The fragrant sauce and meat match perfectly.
