Celtuce, also called asparagus lettuce or Chinese lettuce, is of the lettuce family and originated from Asia. The vegetable is gaining popularity in the world, with its stem and leaves used in many dishes.
Shredded Celtuce with XO-sauce (Chinese cooking)
"Shredded celtuce with XO-sauce" is a self-made recipe by Chef Gao Wenjun from Sofitel Chengdu Taihe Hotel. The cold dish gives full play to the taste, texture, color and fragrance of the vegetable.

What you need:
Shredded celtuce, 50g;
Salt, appropriate amount;
XO-sauce 50g (you can add peeled prawns, scallops, red pepper, red chili paste and so on, according to individual preference)
The process:
Soak the shredded celtuce in salt water, arrange them on a serving platter and set aside;
Top the shredded celtuce with XO-sauce and dressing.

Salad (Western cooking, adapted by Kimberly Dallas)
A friend of mine inspired me to create this salad by serving a similar salad to me. It was a great starting point and I quickly adapted the recipe to different seasons of the year. This is my spring adaptation of a very simple, but delicious recipe.

What you need:
Salad
1.5 kg leaf celtuce, chopped finely
20 red grapes, halved and seeded
20 strawberries, sliced thinly
Goat cheese, crumbled
Caramelized Almonds
20 whole almonds
50 g granulated sugar
Dressing
5 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp white wine vinegar
1 tsp lemon juice
1 tsp dijon mustard
1 clove garlic, minced

The process:
Wash and chopped the celtuce and put in a salad bowl. Slice grapes in half and deseed them. Remove the strawberry stem and slice them thinly. Add to salad and top with crumbled goat cheese.
Put sugar into a frying pan and slowly melt on high flame. When sugar is melted, add almonds and stir until the sugar is slightly brown. Remove from pan to a plate to cool. (Note: I put the plate in the refrigerator and chill.) After the almonds are completely cool, coarsely chop and add to salad.
Combine all ingredients into a jar and shake well. Top your salad with the dressing and toss.
